Banana Egg Pie / Mutta Marichathu


This is an easy and delicious malabar delicacy, prepared mostly for ramadan fast breaking or as a tea time snack.
The high protein content of the dish makes it an ideal food for breaking the day long fast and supplying the body with immediate energy.

Ingredients:
Indian Plaintain / Nenthrapazham - 2 No.s
Eggs - 4
Sugar - 3Tbsp + 1Tbsp
Ghee - 2Tbsp
Cashewnuts - 2Tbsp
Raisins - 1Tbsp
Cardomom Powder - 1tsp


Method:
Slit the banana lengthwise into 4 slices and cut into small pieces.
Heat a wok and add the ghee. Add banana to this and fry for a few minutes until the banana turns a golden brown color. You can also add 1tsp sugar to this.

Add cashew nuts and raisins and fry again until they are done. Meanwhile, beat well the eggs, sugar and cardamom powder.

Take a thick bottom pan and grease with ghee. Transfer the fried banana into this and spread over the dish. Pour the egg mixture on top of it. Keep the dish on fire on a low heat, cover and cook for 15-20 minutes.


Slice into squares and transfer to a serving dish. Serves 6.
